Ginger Mint Limeade
Tart and properly gingery, with the mint steeped into the hot syrup rather than muddled into the glass. The syrup keeps for two weeks, so the drink itself is a one-minute job once it's made.

Instructions
- Combine the water, sugar, and ginger in a small saucepan. Bring to a boil, stirring to dissolve the sugar, then reduce to a bare simmer for 5 minutes.
- Off heat, stir in the mint, cover, and steep 20 minutes. Any longer and the mint turns grassy.
- Strain into a jar, pressing the solids to get everything out. Cool to room temperature. You should have about 1 1/4 cups.
- In a pitcher, stir together the syrup, lime juice, and cold water. Taste and adjust with more water or lime.
- Serve over plenty of ice, with a lime wheel and a mint sprig in each glass.
